Pulled Chicken Tacos

This dish is one of my favourites – not only because it tastes amazing, but because EVERYONE in the family eats it and I don’t have to spend time altering it for anyone. Tonight’s dinner was made on the fly. I cheated BIG time and bought a roast chicken. We had been at the beach all day and we were all exhausted so quick and easy was the order of the day.


The weather has been amazing all this week, so it’s been disposable barbecue dinners every day this week. The vegetable count has been low, but we more than made up for it with fresh fruit as we went through punnets of strawberries, bags of cherries and blueberries and avo on toast to beat the band. That being said, after a morning of ham and tayto sandwiches, it was time to cook a proper dinner. IMG_20170714_221840_377.jpg

I’ve discovered that my kids get food envy. For ages, I would make them a plainer version of what I was having – plain chicken and sweetcorn tacos with a little salsa. But recently, they have started looking over my shoulder and asking why my dinner looks so much more delicious and colourful than theirs. “Its simple really guys – I take lots of vegetables with my dinner”. That was the line that changed things. Little by little they are experimenting with food and vegetables are suddenly not as boring as they thought.                                             20170716_131158

This was a really simple meal to put together. I always have an ‘Old El Paso’ taco kit in the cupboard at home and the fridge is always stocked with a selection of veg so all I needed was a roast chicken. We picked one of these up from our local @supervaluirl as I know the chicken is local and good quality. I sprinkled a little cheese inside the tacos then put them in the oven to crisp up. As the cheese melts, it tends to soften the crease in the taco and they are less likely to crack when you take the first bite. I usually give the kids the option of having their veg raw as they sometimes prefer it, but on this occasion, I ended up stirfrying everything. All thats missing from this photo is the cherry tomatoes I added along with a little salsa and taco seasoning.

Right then- Instructions……

Fry up a red onion and some garlic in a little oil. Once the onions start to caramelise, add the carrots and the halved cherry tomatoes. Once the tomatoes start to soften and release their juices add the peppers and whatever else you have chosen from the fridge. Add a tablespoon of the taco seasoning or if you prefer, some salsa. I usually add just a little water as I like my tacos saucy!

While this is simmering, I use two forks to shred the chicken off the breast and at this point, I layer the chicken into the tacos with some sweet corn. I top them off with the colourful mix from the frying pan and if I’m feeling really generous with myself, I throw on a dollop of greek yoghurt as a cooler. IMG_20170715_142531_346.jpg

The end result is a delicious mess of food to eat with your hands – always a favourite with messy pre-teens!

The shopping list for this one is simple – 

Taco kit, your cheese of choice, cherry tomatoes, peppers, onions, garlic, +/- greek yoghurt and on this occasion, I used roast chicken.

Anyone can make these – its not a recipe I have come up with all on my own – but I just want to let you know that it is possible to have the delicious food you crave without going over budget on calories.
